Ingredients
- 2 eggs
 - 10 fl oz (300 ml) Greek yogurt
 - 1 tsp salt
 - 2 tsp baking powder
 - 1 tsp sugar
 - 3 tablespoons vegetable or olive oil
 - 16 oz (450 grams) all-purpose flour
 - 9 oz (250 grams) cheddar cheese, grated
 - 9 oz (250 grams) Maasdam cheese, grated
 
Instructions
1. Prepare the Dough:
- In a large mixing bowl, whisk together the eggs, Greek yogurt, salt, baking powder, sugar, and oil until smooth and combined.
 - Gradually add the flour, stirring with a spoon or spatula, until a soft, slightly sticky dough forms. Avoid overmixing.
 
2. Add the Cheese Filling:
- Divide the dough into two equal portions.
 - Roll out one portion on a lightly floured surface into a round or oval shape, about ½ inch thick.
 - Evenly sprinkle half of the grated cheddar and Maasdam cheeses over the dough.
 - Roll out the second portion and place it on top, pressing the edges together to seal the cheese inside.
 
3. Cook the Bread:
- Heat a non-stick skillet over medium heat.
 - Carefully transfer the prepared dough into the skillet.
 - Cook for 4-5 minutes on each side, or until the surface is golden brown and the cheese inside is melted and gooey.
 
4. Slice and Serve:
- Remove the bread from the skillet and let it cool for a minute.
 - Slice into wedges or strips, and serve warm for the ultimate cheesy treat.
 
Notes
- Substitute Maasdam cheese with gouda, mozzarella, or Monterey Jack if needed.
 - Adjust the heat to prevent the bread from burning while the cheese melts.
