Ingredients

  • 2 eggs
  • 10 fl oz (300 ml) Greek yogurt
  • 1 tsp salt
  • 2 tsp baking powder
  • 1 tsp sugar
  • 3 tablespoons vegetable or olive oil
  • 16 oz (450 grams) all-purpose flour
  • 9 oz (250 grams) cheddar cheese, grated
  • 9 oz (250 grams) Maasdam cheese, grated

Instructions

1. Prepare the Dough:

  • In a large mixing bowl, whisk together the eggs, Greek yogurt, salt, baking powder, sugar, and oil until smooth and combined.
  • Gradually add the flour, stirring with a spoon or spatula, until a soft, slightly sticky dough forms. Avoid overmixing.

2. Add the Cheese Filling:

  • Divide the dough into two equal portions.
  • Roll out one portion on a lightly floured surface into a round or oval shape, about ½ inch thick.
  • Evenly sprinkle half of the grated cheddar and Maasdam cheeses over the dough.
  • Roll out the second portion and place it on top, pressing the edges together to seal the cheese inside.

3. Cook the Bread:

  • Heat a non-stick skillet over medium heat.
  • Carefully transfer the prepared dough into the skillet.
  • Cook for 4-5 minutes on each side, or until the surface is golden brown and the cheese inside is melted and gooey.

4. Slice and Serve:

  • Remove the bread from the skillet and let it cool for a minute.
