Ingredients

For the Taquitos:

  • 1 lb lean ground beef
  • 1 packet (1 oz) taco seasoning
  • 4 oz cream cheese
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • 1 cup shredded pepper jack cheese
  • 8 flour or corn tortillas

  • Homemade pico de gallo

Instructions

Step 1: Prepare the Filling

  1. Heat a large skillet over medium-high heat.
  2. Add ground beef and cook, breaking it apart with a spatula, until no longer pink. Drain any excess grease if desired.
  3. Stir in taco seasoning and mix well.
  4. Add cream cheese, sour cream, and salsa. Cook until creamy and heated through.
  5. Stir in shredded pepper jack cheese and remove from heat.

Step 2: Warm the Tortillas

  1. If tortillas feel stiff, microwave them for 10 seconds to make them pliable.

Step 3: Assemble the Taquitos

  1. Place 2 heaping tablespoons of the beef mixture onto one side of a tortilla.
  2. Roll the tortilla tightly around the filling to form a taquito.
  3. Place the rolled taquito seam-side down on a baking sheet. Repeat with remaining filling and tortillas.

Step 4: Choose Your Cooking Method

  • Oven Method:
    1. Preheat oven to 375°F.
    2. Optionally, brush taquitos with oil for a crispier finish.
    3. Bake for 15 minutes, or until golden and crispy.
  • Air Fryer Method:
    1. Preheat air fryer to 350°F.
    2. Place taquitos in a single layer in the air fryer basket.
    3. Cook for 3–4 minutes, flipping halfway, until crispy. Optionally, brush with oil for extra crunch.
  • Pan Fry Method:
    1. Heat about 1/2 inch of oil in a shallow skillet over medium-high heat.
    2. Add 2–4 taquitos at a time, seam-side down.
    3. Fry until golden brown and crispy on all sides. Drain on paper towels.
