Description

Cheesy Foil Pack Potatoes are a delicious and easy-to-make side dish perfect for grilling or baking, featuring tender baby potatoes coated in cheese and spices.

Ingredients

  • 2 pounds baby potatoes, halved
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Aluminum foil

Instructions

  1. Preheat your grill or oven to 400°F.
  2. In a large bowl, combine the halved baby potatoes, olive oil, garlic powder, onion powder, paprika, salt, and pepper. Toss until the potatoes are evenly coated.
  3. Tear off four large pieces of aluminum foil, about 12 inches long. Divide the potato mixture evenly among the foil pieces, placing them in the center.
  4. Top each portion of potatoes with shredded cheddar cheese and a dollop of sour cream. Sprinkle with chopped green onions.
  5. Fold the sides of the foil over the potatoes to create a sealed packet, making sure there are no openings for steam to escape.
  6. Place the foil packets on the grill or in the oven. Cook for 25-30 minutes, or until the potatoes are tender when pierced with a fork.
  7. Carefully open the foil packets (watch for steam) and serve hot.

Notes

  • For a spicy kick, add diced jalapeños or a sprinkle of red pepper flakes to the potato mixture before sealing the foil packets.
  • Substitute the cheddar cheese with your favorite cheese, such as Monterey Jack or pepper jack, for a different flavor profile.
