Description

Cheesy Hashbrown Casserole is a cozy comfort dish made with frozen hashbrowns, creamy ingredients, and topped with melted cheese.

Ingredients

  • 2 (30-ounce) bags of thawed frozen hashbrowns
  • 1 (10.5-ounce) can of condensed cream of chicken soup
  • 1 (16-ounce) container of sour cream
  • 2 cups of shredded sharp cheddar cheese
  • 1 cup of diced onions
  • 1/2 cup of melted butter
  • 1 teaspoon of garlic powder
  • 1 teaspoon of salt
  • 1/2 teaspoon of ground black pepper
  • 1 cup of crushed cornflakes (optional, for a crunchy topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13-inch baking dish with a light coating of cooking spray or butter.
  2. In a large bowl, mix together the thawed hashbrowns, cream of chicken soup, sour cream, 1 1/2 cups of the shredded cheddar cheese, diced onions, melted butter, garlic powder, salt, and black pepper until everything is well blended.
  3. Transfer the mixture into the greased baking dish, spreading it out evenly across the bottom.
  4. If you like a crunchy texture, sprinkle the crushed cornflakes over the top of the mixture.
  5. Bake the casserole in the preheated oven for 45-50 minutes, or until it’s hot and bubbly with a golden-brown crust on top.
  6. After baking, allow it to cool for about 10 minutes to help it firm up before serving.
  7. Top the casserole with the remaining 1/2 cup of cheddar cheese and place it back in the oven for another 5 minutes, or until the cheese is melted and gooey.

Notes

  • For an extra kick, consider adding 1/2 teaspoon of cayenne pepper or some diced jalapeños to the mix.
  • To turn this side dish into a hearty meal, feel free to incorporate cooked and crumbled bacon or diced ham into the hashbrown mixture before baking.
