Ingredients
- 2 (30-ounce) bags of thawed frozen hashbrowns
- 1 (10.5-ounce) can of condensed cream of chicken soup
- 1 (16-ounce) container of sour cream
- 2 cups of shredded sharp cheddar cheese
- 1 cup of diced onions
- 1/2 cup of melted butter
- 1 teaspoon of garlic powder
- 1 teaspoon of salt
- 1/2 teaspoon of ground black pepper
- 1 cup of crushed cornflakes (optional, for a crunchy topping)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×13-inch baking dish with a light coating of cooking spray or butter.
- In a large bowl, mix together the thawed hashbrowns, cream of chicken soup, sour cream, 1 1/2 cups of the shredded cheddar cheese, diced onions, melted butter, garlic powder, salt, and black pepper until everything is well blended.
- Transfer the mixture into the greased baking dish, spreading it out evenly across the bottom.
- If you like a crunchy texture, sprinkle the crushed cornflakes over the top of the mixture.
- Bake the casserole in the preheated oven for 45-50 minutes, or until it’s hot and bubbly with a golden-brown crust on top.
- After baking, allow it to cool for about 10 minutes to help it firm up before serving.
- Top the casserole with the remaining 1/2 cup of cheddar cheese and place it back in the oven for another 5 minutes, or until the cheese is melted and gooey.

- For an extra kick, consider adding 1/2 teaspoon of cayenne pepper or some diced jalapeños to the mix.
