  • 500 g minced meat (beef, chicken, or pork)
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon sweet paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon nutmeg
  • ½ teaspoon oregano
  • 2 tablespoons tomato paste
  • 2 fresh tomatoes, diced
  • 1 pickled cucumber, finely chopped
  • 1 red onion, finely chopped
  • 200 g cheese (mixed, grated)
  • 4 tortillas
  • 4 teaspoons mayonnaise
  • 4 teaspoons grainy mustard
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Minced Meat:

    • Heat olive oil in a large skillet over medium heat.
    • Add the chopped onion and cook until translucent, about 3-4 minutes.
    • Add the minced meat, breaking it up with a spoon as it cooks. Cook until browned and fully cooked through.
    • Season with salt, black pepper, sweet paprika, garlic powder, nutmeg, and oregano. Stir to combine.
  2. Add Tomato Paste and Fresh Tomatoes:

    • Stir in the tomato paste and cook for 2-3 minutes to enhance the flavor.
    • Add the diced tomatoes and let cook for another 5 minutes, allowing the flavors to meld together.
  3. Prepare the Toppings:

    • Finely chop the pickled cucumber and red onion.
    • Grate the cheese mixture (200 g).
  4. Assemble the Tortillas:

    • Preheat your oven to 350°F (175°C).
    • Lay the tortillas flat on a surface.
    • Spread 1 teaspoon of mayonnaise and 1 teaspoon of grainy mustard onto each tortilla.
    • Evenly distribute the cooked minced meat mixture across the tortillas.
    • Scatter the grated cheese evenly over the meat mixture.
    • Add the chopped pickled cucumber and red onion on top.
  5. Bake the Tortillas:

    • Place the assembled tortillas on a baking sheet.
    • Bake in the preheated oven for about 10 minutes, or until the cheese is melted and bubbly.
  6. Garnish and Serve:

    • Remove the tortillas from the oven and let them cool slightly.
    • Garnish with freshly chopped parsley.
    • Serve warm and enjoy your cheesy, savory delight!
