Ingredients

  • 800g potatoes
  • Water (enough to cover potatoes for boiling)
  • 1 tsp salt (for boiling)
  • 20g corn starch
  • Vegetable oil (for frying)
  • 20g unsalted butter
  • 5g flour
  • 100ml milk
  • 1/4 tsp salt (for sauce)
  • 1/4 tsp chili powder
  • Black pepper to taste
  • 100g grated cheese

Instructions

  • Prepare the Potatoes:

    • Peel and cut the potatoes into 1-inch cubes.
    • Place them in a pot, cover with water, and add 1 tsp salt.
  • Boil the Potatoes:

    • Bring the water to a boil, then simmer for 10–15 minutes until tender but firm.
    • Drain and allow them to cool slightly.
  • Coat the Potatoes:

    • Toss the potatoes with corn starch until evenly coated.
  • Fry the Potatoes:

    • Heat vegetable oil in a skillet over medium-high heat.
    • Fry the potatoes in batches until golden brown and crispy.
    • Drain on paper towels to remove excess oil.
  • Make the Cheese Sauce:

    • Melt butter in a saucepan over medium heat, then stir in the flour.
    • Gradually add milk while whisking to prevent lumps.
    • Stir in salt, chili powder, and black pepper.
    • Add grated cheese and stir until smooth and creamy.
  • Combine and Serve:

    • Place the fried potatoes in a serving dish and pour the cheese sauce over them.
    • Toss gently to coat, garnish if desired, and serve hot.

Notes

  • Use starchy potatoes like Russets for the best texture.
  • Adjust the seasoning to your taste by adding garlic powder, onion powder, or herbs.
  • To make a lighter version, bake the potatoes instead of frying them.
