Description

A decadent dessert combining the flavors of cherries and amaretto in a classic tiramisu.


Ingredients

  • 2 cups fresh cherries, pitted and halved
  • 1 cup granulated sugar, divided
  • 1 cup strong brewed coffee, cooled
  • 1/2 cup amaretto liqueur
  • 1 cup heavy cream
  • 8 ounces mascarpone cheese, softened
  • 1 teaspoon vanilla extract
  • 24 ladyfinger cookies
  • Cocoa powder, for dusting

Instructions

  1. In a medium bowl, combine the cherries with 1/4 cup of sugar. Let them sit for about 30 minutes to release their juices.
  2. In a shallow dish, mix the cooled coffee and amaretto together. Set aside.
  3. In a large mixing bowl, whip the heavy cream, remaining 3/4 cup of sugar, and vanilla extract until soft peaks form. Gently fold in the mascarpone cheese until smooth and well combined.
  4. Quickly dip each ladyfinger into the coffee-amaretto mixture for about 1-2 seconds, ensuring they are soaked but not soggy.
  5. In a 9×9-inch dish, arrange a layer of soaked ladyfingers at the bottom. Spread half of the mascarpone mixture over the ladyfingers, then add half of the cherry mixture on top.
  6. Repeat the layers with the remaining ladyfingers, mascarpone mixture, and cherries.
  7. Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.
  8. Before serving, dust the top with cocoa powder.

Notes

  • For a richer flavor, try adding a tablespoon of almond extract to the mascarpone mixture.
  • You can also substitute the cherries with raspberries or strawberries for a different fruit twist.
