Description
A decadent dessert combining the flavors of cherries and amaretto in a classic tiramisu.
Ingredients
- 2 cups fresh cherries, pitted and halved
- 1 cup granulated sugar, divided
- 1 cup strong brewed coffee, cooled
- 1/2 cup amaretto liqueur
- 1 cup heavy cream
- 8 ounces mascarpone cheese, softened
- 1 teaspoon vanilla extract
- 24 ladyfinger cookies
- Cocoa powder, for dusting
Instructions
- In a medium bowl, combine the cherries with 1/4 cup of sugar. Let them sit for about 30 minutes to release their juices.
- In a shallow dish, mix the cooled coffee and amaretto together. Set aside.
- In a large mixing bowl, whip the heavy cream, remaining 3/4 cup of sugar, and vanilla extract until soft peaks form. Gently fold in the mascarpone cheese until smooth and well combined.
- Quickly dip each ladyfinger into the coffee-amaretto mixture for about 1-2 seconds, ensuring they are soaked but not soggy.
- In a 9×9-inch dish, arrange a layer of soaked ladyfingers at the bottom. Spread half of the mascarpone mixture over the ladyfingers, then add half of the cherry mixture on top.
- Repeat the layers with the remaining ladyfingers, mascarpone mixture, and cherries.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.
- Before serving, dust the top with cocoa powder.
Notes
- For a richer flavor, try adding a tablespoon of almond extract to the mascarpone mixture.
- You can also substitute the cherries with raspberries or strawberries for a different fruit twist.
