Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder

  • 1/4 cup milk
  • 1/4 cup unsalted butter, melted
  • 8 ounces cream cheese, softened

  • 1 cup heavy whipping cream
  • 1 cup cherry pie filling

Instructions

  1. Preheat your oven to 350°F. Grease a 15×10-inch jelly roll pan and line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat the eggs and granulated sugar with an electric mixer on high speed until thick and pale, about 5 minutes.
  4. Mix in 1 teaspoon of vanilla extract.
  5. Gradually add the flour mixture, alternating with the milk and melted butter, mixing until just combined.
  6. Pour the batter into the prepared pan, spreading it evenly.
  7. Bake for 12-15 minutes or until the cake springs back when lightly touched.
  8. While the cake is baking, prepare a clean kitchen towel by dusting it with powdered sugar.
  9. Once the cake is done, immediately invert it onto the prepared towel.
  10. Carefully peel off the parchment paper and roll the cake up in the towel, starting from one of the short ends. Let it cool completely.
  11. In a medium bowl, beat the softened cream cheese and powdered sugar until smooth.
  12. In another bowl, whip the heavy cream until stiff peaks form.
  13. Gently fold the whipped cream into the cream cheese mixture until well combined.
  14. Once the cake is cool, unroll it carefully and spread the cream cheese mixture evenly over the surface.
  15. Spoon the cherry pie filling over the cream cheese layer.
  16. Roll the cake back up tightly, starting from the short end, and place it seam-side down on a serving platter.
  17. Refrigerate for at least 1 hour before slicing.
