Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3 large eggs
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 cup milk
- 1/4 cup unsalted butter, melted
- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1 cup cherry pie filling
Instructions
- Preheat your oven to 350°F. Grease a 15×10-inch jelly roll pan and line it with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large bowl, beat the eggs and granulated sugar with an electric mixer on high speed until thick and pale, about 5 minutes.
- Mix in 1 teaspoon of vanilla extract.
- Gradually add the flour mixture, alternating with the milk and melted butter, mixing until just combined.
- Pour the batter into the prepared pan, spreading it evenly.
- Bake for 12-15 minutes or until the cake springs back when lightly touched.
- While the cake is baking, prepare a clean kitchen towel by dusting it with powdered sugar.
- Once the cake is done, immediately invert it onto the prepared towel.
- Carefully peel off the parchment paper and roll the cake up in the towel, starting from one of the short ends. Let it cool completely.
- In a medium bowl, beat the softened cream cheese and powdered sugar until smooth.
- In another bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until well combined.
- Once the cake is cool, unroll it carefully and spread the cream cheese mixture evenly over the surface.
- Spoon the cherry pie filling over the cream cheese layer.
- Roll the cake back up tightly, starting from the short end, and place it seam-side down on a serving platter.
- Refrigerate for at least 1 hour before slicing.
Notes
- For a chocolate twist, add 1/4 cup of cocoa powder to the cake batter.
- You can substitute the cherry pie filling with fresh berries or other fruit preserves for a different flavor.
