Description
Chicken 65 is a popular Indian appetizer known for its spicy and crispy texture, made with marinated chicken pieces that are deep-fried to perfection.
Ingredients
- 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 cup buttermilk
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon red chili powder
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1 tablespoon ginger-garlic paste
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- Vegetable oil, for frying
- Fresh cilantro, for garnish
- Lemon wedges, for serving
Instructions
- In a large bowl, combine the buttermilk, salt, black pepper, red chili powder, turmeric powder, cumin powder, coriander powder, garam masala, and ginger-garlic paste. Mix well to create a marinade. Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
- In a separate bowl, mix the all-purpose flour and cornstarch together. This will be used for coating the chicken.
- Heat vegetable oil in a deep frying pan over medium-high heat. You’ll need enough oil to submerge the chicken pieces.
- Remove the marinated chicken from the refrigerator. Dredge each piece in the flour and cornstarch mixture, shaking off any excess.
- Once the oil is hot (about 350°F), carefully add the coated chicken pieces in batches. Fry until golden brown and crispy, about 5-7 minutes per batch. Ensure not to overcrowd the pan.
- Use a slotted spoon to remove the fried chicken and place it on a paper towel-lined plate to drain excess oil.
- Garnish with fresh cilantro and serve hot with lemon wedges on the side.
Notes
- For extra heat, add chopped green chilies to the marinade or sprinkle cayenne pepper into the flour mixture.
- Serve with a side of yogurt sauce or raita for a cooling contrast to the spicy chicken.
