Ingredients

  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 cup buttermilk
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon red chili powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1 tablespoon ginger-garlic paste
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • Vegetable oil, for frying
  • Fresh cilantro, for garnish
  • Lemon wedges, for serving

Instructions

  1. In a large bowl, combine the buttermilk, salt, black pepper, red chili powder, turmeric powder, cumin powder, coriander powder, garam masala, and ginger-garlic paste. Mix well to create a marinade. Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
  2. In a separate bowl, mix the all-purpose flour and cornstarch together. This will be used for coating the chicken.
  3. Heat vegetable oil in a deep frying pan over medium-high heat. You’ll need enough oil to submerge the chicken pieces.
  4. Remove the marinated chicken from the refrigerator. Dredge each piece in the flour and cornstarch mixture, shaking off any excess.
  5. Once the oil is hot (about 350°F), carefully add the coated chicken pieces in batches. Fry until golden brown and crispy, about 5-7 minutes per batch. Ensure not to overcrowd the pan.
  6. Use a slotted spoon to remove the fried chicken and place it on a paper towel-lined plate to drain excess oil.
  7. Garnish with fresh cilantro and serve hot with lemon wedges on the side.
