Description

This Chicken Avocado Melt is the ultimate comfort sandwich—crispy on the outside, gooey and cheesy on the inside, and packed with tender chicken, creamy avocado, and melty cheese. Perfect for a quick lunch, hearty dinner, or even a casual brunch, this sandwich delivers bold flavors and satisfying textures in every bite!


Ingredients

For the Sandwich:

  • 2 boneless, skinless chicken breasts
  • Salt & pepper to taste
  • 1 tbsp olive oil
  • 1 ripe avocado, sliced or mashed
  • 4 slices of cheese (Swiss, cheddar, or provolone)
  • 4 slices of bread (sourdough, ciabatta, or your choice)
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced
  • Butter or olive oil for grilling

For the Spread:

  • 2 tbsp mayonnaise
  • 1 tbsp Dijon mustard

Instructions

  • Cook the Chicken
    • Season chicken breasts with salt & pepper.
    • Heat olive oil in a skillet over medium-high heat, cooking for 6-7 minutes per side until fully cooked.
    • Let rest for a few minutes, then slice thinly.
  • Prepare Ingredients
    • Slice the avocado, cheese, onion, and tomato.
    • In a small bowl, mix mayonnaise and Dijon mustard for the spread.
  • Assemble the Sandwich
    • Spread mayo-mustard mixture on one side of each bread slice.
    • Layer on chicken, avocado, cheese, red onion, and tomato.
    • Top with the second slice of bread, spread side down.
  • Grill to Perfection
    • Heat a skillet or grill pan over medium heat.
    • Add butter or olive oil, then cook sandwiches for 3-4 minutes per side until golden brown and cheese is melted.
  • Serve & Enjoy!
    • Let cool slightly, then slice in half.
