  • Author: Annabel
  • Total Time: 25 minutes
  • Yield: 2 sandwiches

Description

This Chicken Avocado Melt Sandwich combines tender, juicy chicken, creamy avocado, and melted cheese between crispy, golden bread slices. It’s the ultimate comfort food for lunch, dinner, or any time you crave something hearty and flavorful.

Ingredients

  • 2 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 avocado, sliced
  • 4 slices of your favorite cheese (Swiss, cheddar, or provolone)
  • 4 slices of bread (sourdough, ciabatta, or your choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced
  • Butter or olive oil, for grilling

Instructions

  • Prepare the Chicken:
    • Season both sides of the chicken breasts with salt and pepper.
    • Heat olive oil in a skillet over medium heat.
    • Cook the chicken for 5-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
    • Remove the chicken from the skillet and let it rest for 5 minutes. Slice thinly.
  • Prepare the Sandwich:
    • Lay out the bread slices. Spread mayonnaise on one side and Dijon mustard on the other.
    • Place a slice of cheese on the bottom bread slices.
  • Layer the Ingredients:
    • Add the sliced chicken, followed by avocado, red onion, and tomato slices.
    • Top with another slice of cheese.
  • Assemble and Grill:
    • Place the remaining bread slices on top, mayo side facing inward.
    • Heat a skillet or griddle over medium-low heat and add butter or olive oil.
    • Grill each sandwich for 3-4 minutes per side, pressing gently with a spatula, until the bread is golden and the cheese has melted.
  • Serve:
    • Slice each sandwich in half and serve warm.

Notes

  • Chicken Tip: Let the cooked chicken rest before slicing to keep it juicy.
  • Avocado: Use ripe avocados for the best texture and flavor.
  • Cheese Variety: Try mozzarella, Monterey Jack, or smoked Gouda for a different twist.
  • Bread Options: Ciabatta or sourdough provide the best structure and flavor for this sandwich.
