Description
A delicious and easy-to-make Chicken Caesar Pasta Salad that combines rotini pasta, diced chicken, and fresh vegetables, all tossed in a creamy Caesar dressing.
Ingredients
- 8 ounces rotini pasta
- 2 cups cooked chicken, diced
- 1 cup cherry tomatoes, halved
- 1 cup romaine lettuce, chopped
- ½ cup Caesar dressing
- ½ cup grated Parmesan cheese
- ¼ cup croutons
- Salt and pepper to taste
- 1 tablespoon olive oil (optional)
- 1 teaspoon garlic powder (optional)
Instructions
- Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
- In a large bowl, combine the cooked pasta, diced chicken, cherry tomatoes, and chopped romaine lettuce.
- Drizzle the Caesar dressing over the salad mixture and toss gently to combine.
- Add the grated Parmesan cheese and croutons, then season with salt and pepper to taste. If desired, drizzle with olive oil for added richness and sprinkle with garlic powder for extra flavor.
- Serve immediately or chill in the refrigerator for 30 minutes to allow the flavors to meld.
Notes
- For a lighter version, substitute Greek yogurt for half of the Caesar dressing.
- Add sliced avocado or bell peppers for extra color and nutrition.
