Ingredients

  • 4 medium skinless, boneless chicken breasts, pounded ¼ inch thick
  • 4 tablespoons butter
  • 4 tablespoons olive oil
  • 1 cup mushrooms, sliced
  • ½ cup Marsala wine
  • ¼ cup cooking sherry

Instructions

  1. Prepare Ingredients: Gather and prep all ingredients. Pound the chicken to ¼-inch thickness, slice the mushrooms, and measure the wine and sherry.
  2. Mix Coating: In a shallow dish, combine flour, salt, pepper, and oregano. Dredge the chicken breasts in the mixture, shaking off excess flour.
  3. Sear the Chicken: Heat olive oil and butter in a large skillet over medium heat. Add the coated chicken breasts and cook for 3–4 minutes on each side until lightly browned. Remove from the skillet and set aside.
  4. Sauté Mushrooms: In the same skillet, add the sliced mushrooms. Sauté for about 2 minutes, stirring occasionally, until softened.
  5. Deglaze with Wine and Sherry: Pour the Marsala wine and cooking sherry into the skillet. Stir gently, scraping the bottom of the pan to release any browned bits.
  6. Simmer the Chicken: Return the chicken to the skillet, spooning the sauce over the top. Cover the skillet and reduce heat to low. Simmer for 10 minutes, turning the chicken once.
  7. Serve: Plate the chicken and pour the mushroom and wine sauce over the top. Garnish with fresh parsley, if desired, and serve hot.
