- Prepare Ingredients: Gather and prep all ingredients. Pound the chicken to ¼-inch thickness, slice the mushrooms, and measure the wine and sherry.
- Mix Coating: In a shallow dish, combine flour, salt, pepper, and oregano. Dredge the chicken breasts in the mixture, shaking off excess flour.
- Sear the Chicken: Heat olive oil and butter in a large skillet over medium heat. Add the coated chicken breasts and cook for 3–4 minutes on each side until lightly browned. Remove from the skillet and set aside.
- Sauté Mushrooms: In the same skillet, add the sliced mushrooms. Sauté for about 2 minutes, stirring occasionally, until softened.
- Deglaze with Wine and Sherry: Pour the Marsala wine and cooking sherry into the skillet. Stir gently, scraping the bottom of the pan to release any browned bits.
- Simmer the Chicken: Return the chicken to the skillet, spooning the sauce over the top. Cover the skillet and reduce heat to low. Simmer for 10 minutes, turning the chicken once.
- Serve: Plate the chicken and pour the mushroom and wine sauce over the top. Garnish with fresh parsley, if desired, and serve hot.
