Instructions

1. Preheat Your Oven

Preheat the oven to 425°F (220°C).

2. Cook the Chicken and Vegetables

  • In a large saucepan, combine chicken, carrots, peas, and celery.
  • Add water to cover and bring to a boil. Boil for about 15 minutes, then drain.

3. Make the Gravy

  • In a separate saucepan, melt butter over medium heat.

  • Stir in flour, salt, pepper, and celery seed. Cook for 1 minute to eliminate the raw taste of the flour.
  • Gradually add chicken broth and milk, stirring constantly.

4. Assemble the Pie

  • Place one pie crust into a 9-inch pie dish.
  • Layer chicken and vegetables evenly on the crust.
  • Pour the hot gravy mixture over the chicken and vegetables.
  • Cover with the second pie crust, sealing the edges by pinching them together. Trim any excess dough.
  • Use a knife to make slits in the top crust for steam to escape.

5. Bake the Pie

Bake the pie in the preheated oven for 30–35 minutes, or until the crust is golden brown and the filling is bubbling.

6. Cool and Serve

Allow the pie to cool for about 10 minutes before slicing and serving.
