Description

This Chicken Salad with Apples is a refreshing and flavorful mix of tender chicken, crisp apples, juicy grapes, and a creamy yogurt-based dressing. It’s a perfect balance of sweet, savory, and crunchy—ideal for lunch, dinner, or meal prep!


Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1 cup apples, diced (2 medium apples, such as Fuji or Honeycrisp)
  • 1/2 cup celery, diced
  • 1/2 cup red grapes, halved
  • 1/4 cup walnuts, chopped (optional)
  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • Salt and pepper, to taste

 

  • Fresh parsley, chopped (for garnish)

Instructions

  • Prepare the Chicken
    If not already cooked, boil or bake chicken until fully done. Let cool, then dice or shred into bite-sized pieces.

  • Chop Fruits and Veggies
    Dice apples, celery, and halve the grapes. Chop walnuts if using. Set all chopped ingredients aside.

  • Make the Dressing
    In a small bowl, whisk together Greek yogurt, mayonnaise, Dijon mustard, lemon juice, honey, salt, and pepper until smooth.

  • Combine Everything
    In a large mixing bowl, add chicken, apples, celery, grapes, and walnuts. Pour dressing over and mix gently until evenly coated.

 

  • Chill & Serve
    Cover and refrigerate for at least 30 minutes to allow flavors to meld. Garnish with fresh parsley before serving.

Notes

  • For a lighter version, use only Greek yogurt and omit the mayo.
  • Swap walnuts with almonds or pecans, or omit entirely for a nut-free version.
  • Add raisins or dried cranberries for an extra sweet touch.
