- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 teaspoon honey
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
-
Prepare the Chicken
If not already cooked, boil or bake chicken until fully done. Let cool, then dice or shred into bite-sized pieces. -
Chop Fruits and Veggies
Dice apples, celery, and halve the grapes. Chop walnuts if using. Set all chopped ingredients aside. -
Make the Dressing
In a small bowl, whisk together Greek yogurt, mayonnaise, Dijon mustard, lemon juice, honey, salt, and pepper until smooth. -
Combine Everything
In a large mixing bowl, add chicken, apples, celery, grapes, and walnuts. Pour dressing over and mix gently until evenly coated.
-
Chill & Serve
Cover and refrigerate for at least 30 minutes to allow flavors to meld. Garnish with fresh parsley before serving.
Notes
- For a lighter version, use only Greek yogurt and omit the mayo.
- Swap walnuts with almonds or pecans, or omit entirely for a nut-free version.
- Add raisins or dried cranberries for an extra sweet touch.
