Description

Ingredients

  • 2 pounds bone-in, skin-on chicken thighs
  • 1 pound Italian sausage, sliced
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 bell pepper, sliced (any color)
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1 cup chicken broth
  • 1/2 cup white wine
  • 1/4 cup apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Season the chicken thighs with salt and pepper, then add them to the skillet, skin-side down. Sear until golden brown, about 5-7 minutes. Flip and cook for an additional 5 minutes. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the sliced sausage and cook until browned, about 5 minutes. Remove the sausage and set aside with the chicken.
  3. Add the chopped onion and bell pepper to the skillet. Sauté until softened, about 4-5 minutes. Stir in the minced garlic, oregano, and red pepper flakes, cooking for an additional minute until fragrant.
  4. Pour in the chicken broth, white wine, apple cider vinegar, and honey. Stir to combine, scraping up any browned bits from the bottom of the skillet.
  5. Return the chicken and sausage to the skillet, nestling them into the sauce. Bring to a simmer, then cover and reduce the heat to low. Cook for 30-35 minutes, or until the chicken is cooked through and tender.
  6. Remove the lid and increase the heat to medium-high. Let the sauce reduce for about 5-10 minutes, stirring occasionally, until slightly thickened. Adjust seasoning with salt and pepper if needed.
  7. Serve hot, garnished with fresh parsley.
