Chicken Scarpariello is a flavorful Italian-American dish featuring chicken thighs and Italian sausage cooked in a savory sauce with bell peppers, onions, and a hint of sweetness from honey.
Ingredients
- 2 pounds bone-in, skin-on chicken thighs
- 1 pound Italian sausage, sliced
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 1 bell pepper, sliced (any color)
- 1 teaspoon dried oregano
- 1 teaspoon red pepper flakes (adjust to taste)
- 1 cup chicken broth
- 1/2 cup white wine
- 1/4 cup apple cider vinegar
- 1 tablespoon honey
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Season the chicken thighs with salt and pepper, then add them to the skillet, skin-side down. Sear until golden brown, about 5-7 minutes. Flip and cook for an additional 5 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the sliced sausage and cook until browned, about 5 minutes. Remove the sausage and set aside with the chicken.
- Add the chopped onion and bell pepper to the skillet. Sauté until softened, about 4-5 minutes. Stir in the minced garlic, oregano, and red pepper flakes, cooking for an additional minute until fragrant.
- Pour in the chicken broth, white wine, apple cider vinegar, and honey. Stir to combine, scraping up any browned bits from the bottom of the skillet.
- Return the chicken and sausage to the skillet, nestling them into the sauce. Bring to a simmer, then cover and reduce the heat to low. Cook for 30-35 minutes, or until the chicken is cooked through and tender.
- Remove the lid and increase the heat to medium-high. Let the sauce reduce for about 5-10 minutes, stirring occasionally, until slightly thickened. Adjust seasoning with salt and pepper if needed.
- Serve hot, garnished with fresh parsley.

- For a spicier kick, add sliced jalapeños or more red pepper flakes.
- Substitute the chicken thighs with boneless, skinless chicken breasts for a leaner option, adjusting the cooking time as needed.
