Description

Chickpea Salad Melts are a delicious and simple recipe that combines mashed chickpeas with creamy mayonnaise, tangy mustard, and crunchy vegetables, all melted between slices of whole grain bread and cheddar cheese.


Ingredients

  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/4 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 slices whole grain bread
  • 4 slices cheddar cheese
  • 1 tablespoon olive oil or butter

Instructions

  1. In a mixing bowl, mash the chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
  2. Add the mayonnaise, Dijon mustard, lemon juice, celery, red onion, garlic powder, salt, and pepper to the mashed chickpeas. Mix until well combined.
  3. Heat a skillet over medium heat and add olive oil or butter.
  4. Spread a generous amount of the chickpea mixture on two slices of bread. Top each with a slice of cheddar cheese and place the remaining bread slices on top to form sandwiches.
  5. Place the sandwiches in the skillet and cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
  6. Remove from the skillet, slice in half, and serve warm.
