Ingredients
- 8 ounces rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 1/2 cup chimichurri sauce (store-bought or homemade)
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/2 cup feta cheese, crumbled (optional)
Instructions
- Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
- In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, red onion, parsley, and cilantro.
- Add the chimichurri sauce and olive oil to the pasta mixture. Toss everything together until well combined.
- Season with salt and pepper to taste. If using, gently fold in the crumbled feta cheese.
- Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled or at room temperature.
