Description

This choc-mint pull-apart pavlova is a festive and visually stunning dessert that combines crispy pavlova shells, rich chocolate, and refreshing mint with fresh raspberries. Perfect for Christmas or any celebration, it’s a quick, no-fuss dessert that’ll steal the spotlight on your holiday table.


Ingredients

  • 600ml thickened cream
  • 2 x 140g tubs Paul’s double thick dollop cream
  • 200g dark chocolate, melted and cooled
  • 24 petite pavlovas
  • 2 x 125g punnets fresh raspberries
  • 14 mini candy canes, crushed into smaller pieces
  • 2 x 35g Peppermint Crisp chocolate bars, chopped into large pieces
  • Red and green Christmas sprinkles (to decorate)

Instructions

  • Whip the Cream
    • In a large mixing bowl, whip the thickened cream with an electric mixer until soft peaks form.
    • Gently fold in the double thick dollop cream until smooth. Refrigerate the mixture while preparing the other components.
  • Melt the Chocolate
    • Break the dark chocolate into pieces. Place it in a microwave-safe bowl and microwave in 20-second intervals, stirring each time, until melted and smooth. Allow it to cool slightly.
  • Assemble the Pavlova Base
    • Arrange the petite pavlovas on a large serving platter in a circular or pull-apart style, slightly overlapping them for a dramatic effect.
  • Add Cream and Chocolate
    • Spoon the chilled cream mixture evenly over the pavlovas.
    • Drizzle the cooled melted chocolate generously over the cream.
  • Decorate
    • Scatter the fresh raspberries over the pavlovas.
    • Sprinkle the crushed mini candy canes and Peppermint Crisp chocolate pieces on top.
    • Finish with a festive touch by adding the red and green Christmas sprinkles.
  • Chill and Serve
    • Place the pavlova in the refrigerator for 15–20 minutes to allow the toppings to set slightly.
