Description

Delicious Chocolate Chip Vanilla Custard Brioches that are soft, fluffy, and perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1/2 cup whole milk, warmed to 110°F
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips
  • 1/2 cup heavy cream
  • 1/2 teaspoon vanilla extract (for custard)
  • 2 large egg yolks
  • 2 tablespoons granulated sugar (for custard)

Instructions

  1. In a large mixing bowl, combine the flour, sugar, and salt. In a separate bowl, dissolve the yeast in the warm milk and let it sit for about 5 minutes until frothy.
  2. Add the melted butter, eggs, and 1 teaspoon of vanilla extract to the yeast mixture. Whisk until well combined.
  3. Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
  5. Once the dough has risen, punch it down and fold in the chocolate chips. Divide the dough into 12 equal pieces and shape each piece into a ball.
  6. Place the dough balls in a greased muffin tin, covering them with a towel. Let them rise again for about 30 minutes.
  7. Preheat the oven to 350°F. Bake the brioches for 15-20 minutes or until golden brown.
  8. While the brioches are baking, prepare the custard. In a small saucepan, heat the heavy cream and 1/2 teaspoon of vanilla extract over medium heat until just simmering.
  9. In a bowl, whisk together the egg yolks and 2 tablespoons of sugar until pale. Gradually whisk in the hot cream mixture.
  10. Return the mixture to the saucepan and cook over low heat, stirring constantly until thickened (about 5 minutes). Do not let it boil.
  11. Once the brioches are done, let them cool slightly before serving. Serve warm with a drizzle of the vanilla custard over the top.

Notes

  • For a richer flavor, try adding a pinch of cinnamon to the dough.
