Description
Delicious chocolate eclairs filled with whipped cream and topped with a rich chocolate glaze.
Ingredients
- 1 cup water
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup heavy cream (for filling)
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract (for filling)
- 1 cup semi-sweet chocolate chips (for glaze)
- 1/2 cup heavy cream (for glaze)
Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- In a medium saucepan, combine water and butter, and bring to a boil over medium heat.
- Remove from heat and stir in flour and salt until the mixture forms a ball.
- Allow the mixture to cool for about 5 minutes, then add eggs one at a time, mixing well after each addition until smooth and glossy.
- Stir in vanilla extract.
- Transfer the dough to a piping bag fitted with a large round tip and pipe 4-inch long strips onto the prepared baking sheet.
- Bake for 25-30 minutes or until golden brown and puffed, without opening the oven door during baking.
- Remove from the oven and let cool completely on a wire rack.
- While the eclairs cool, whip heavy cream, powdered sugar, and vanilla extract in a mixing bowl until stiff peaks form.
- Transfer the whipped cream to a piping bag and fill each cooled eclair by making a slit in the side.
- For the chocolate glaze, heat heavy cream in a small saucepan until just simmering, then remove from heat and add chocolate chips, stirring until smooth.
- Dip the top of each filled eclair into the chocolate glaze and allow excess to drip off.
- Place the eclairs on a serving platter and refrigerate for at least 30 minutes to set the glaze.
