Description

Delicious chocolate eclairs filled with whipped cream and topped with a rich chocolate glaze.


Ingredients

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream (for filling)
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract (for filling)
  • 1 cup semi-sweet chocolate chips (for glaze)
  • 1/2 cup heavy cream (for glaze)

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. In a medium saucepan, combine water and butter, and bring to a boil over medium heat.
  3. Remove from heat and stir in flour and salt until the mixture forms a ball.
  4. Allow the mixture to cool for about 5 minutes, then add eggs one at a time, mixing well after each addition until smooth and glossy.
  5. Stir in vanilla extract.
  6. Transfer the dough to a piping bag fitted with a large round tip and pipe 4-inch long strips onto the prepared baking sheet.
  7. Bake for 25-30 minutes or until golden brown and puffed, without opening the oven door during baking.
  8. Remove from the oven and let cool completely on a wire rack.
  9. While the eclairs cool, whip heavy cream, powdered sugar, and vanilla extract in a mixing bowl until stiff peaks form.
  10. Transfer the whipped cream to a piping bag and fill each cooled eclair by making a slit in the side.
  11. For the chocolate glaze, heat heavy cream in a small saucepan until just simmering, then remove from heat and add chocolate chips, stirring until smooth.
  12. Dip the top of each filled eclair into the chocolate glaze and allow excess to drip off.
  13. Place the eclairs on a serving platter and refrigerate for at least 30 minutes to set the glaze.

Notes

  • For a lighter filling, substitute half of the heavy cream with Greek yogurt.
  • For a coffee-flavored eclair, add 1 tablespoon of instant coffee granules to the whipped cream filling.
