Ingredients
- 3 ½ ounces dark chocolate (62% cacao)
- 1 tablespoon unsalted butter
- 2 large egg yolks
- 1 tablespoon white sugar
- ¼ cup water
- 1 tiny pinch of salt
- ½ cup heavy whipping cream (chilled)
Instructions
- Prepare the Chocolate:
- Break the dark chocolate into small pieces and set aside with the unsalted butter.
- Make the Egg Yolk Mixture:
- Combine the egg yolks, sugar, water, and salt in a metal mixing bowl.
- Place the bowl over medium-low heat and whisk constantly until the mixture becomes thick, foamy, and reaches a temperature of 145-150°F (63-65°C).
- Melt the Chocolate:
- Remove the egg yolk mixture from the heat.
- Add the chocolate and butter to the mixture, whisking until fully melted and smooth.
- Let the mixture cool to just above room temperature, whisking occasionally.
- Whip the Cream:
- In a separate bowl, whisk the chilled heavy cream until medium-stiff peaks form. Be careful not to over-whip to avoid a grainy texture.
- Fold the Mixtures Together:
- Add one-third of the cooled chocolate mixture to the whipped cream and gently fold with a spatula.
- Add the remaining chocolate mixture and fold carefully until fully incorporated, maintaining the mousse’s airy texture.
- Chill and Serve:
- Spoon the mousse into four serving dishes.
- Cover with plastic wrap and refrigerate for at least 1 hour before serving.
