  • ½ cup heavy whipping cream (chilled)

Instructions

  • Prepare the Chocolate:
    • Break the dark chocolate into small pieces and set aside with the unsalted butter.
  • Make the Egg Yolk Mixture:
    • Combine the egg yolks, sugar, water, and salt in a metal mixing bowl.
    • Place the bowl over medium-low heat and whisk constantly until the mixture becomes thick, foamy, and reaches a temperature of 145-150°F (63-65°C).
  • Melt the Chocolate:
    • Remove the egg yolk mixture from the heat.
    • Add the chocolate and butter to the mixture, whisking until fully melted and smooth.
    • Let the mixture cool to just above room temperature, whisking occasionally.
  • Whip the Cream:
    • In a separate bowl, whisk the chilled heavy cream until medium-stiff peaks form. Be careful not to over-whip to avoid a grainy texture.
  • Fold the Mixtures Together:
    • Add one-third of the cooled chocolate mixture to the whipped cream and gently fold with a spatula.
    • Add the remaining chocolate mixture and fold carefully until fully incorporated, maintaining the mousse’s airy texture.
  • Chill and Serve:
    • Spoon the mousse into four serving dishes.
    • Cover with plastic wrap and refrigerate for at least 1 hour before serving.
