Ingredients

Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large bowl, cream together softened butter and 1 cup of sugar until light and fluffy (about 2-3 minutes).
- Beat in the egg and vanilla extract until fully combined.
- Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.
- Roll out dough on a floured surface to about 1/4-inch thickness.
- Cut out bunny shapes using a cookie cutter and place on prepared baking sheet.
- In a small bowl, mix together 1/4 cup sugar and cinnamon. Sprinkle generously over the cookies.
- Bake for 10-12 minutes or until edges are lightly golden. Do not overbake.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
