Cinnamon Sugar French Toast Muffins are a delicious and easy-to-make treat that combines the classic flavors of French toast in a convenient muffin form.

- Preheat the oven to 350°F. Grease a muffin tin with cooking spray or butter.
- In a large bowl, combine the bread cubes and set aside.
- In another bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, ground cinnamon, and salt until well blended.
- Pour the egg mixture over the bread cubes, gently folding to combine. Let the mixture sit for 10 minutes to allow the bread to soak up the liquid.
- Spoon the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
- In a small bowl, mix the melted butter, brown sugar, and ground cinnamon. Drizzle this mixture over the top of each muffin.
- Bake in the preheated oven for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted in the center comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack.
- Serve warm, optionally dusted with powdered sugar or drizzled with maple syrup.
Notes
- For a fruity twist, add 1/2 cup of diced apples or berries to the bread mixture before baking.
- To make it a bit richer, substitute half of the milk with cream for a creamier texture.
