Description

Cinnamon Sugar French Toast Muffins are a delicious and easy-to-make treat that combines the classic flavors of French toast in a convenient muffin form.


Ingredients

  • 2 cups bread cubes (about 4 slices of day-old bread)
  • 3 large eggs
  • 1 cup milk
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1/2 cup brown sugar
  • 1 tablespoon ground cinnamon (for topping)

Instructions

  1. Preheat the oven to 350°F. Grease a muffin tin with cooking spray or butter.
  2. In a large bowl, combine the bread cubes and set aside.
  3. In another bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, ground cinnamon, and salt until well blended.
  4. Pour the egg mixture over the bread cubes, gently folding to combine. Let the mixture sit for 10 minutes to allow the bread to soak up the liquid.
  5. Spoon the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
  6. In a small bowl, mix the melted butter, brown sugar, and ground cinnamon. Drizzle this mixture over the top of each muffin.
  7. Bake in the preheated oven for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted in the center comes out clean.
  8. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack.
  9. Serve warm, optionally dusted with powdered sugar or drizzled with maple syrup.
