Ingredients
- 2 ripe avocados, diced
- 2 cups mixed greens (such as arugula, spinach, and romaine)
- 1 cup cherry tomatoes, halved
- 1 orange, segmented
- 1 grapefruit, segmented
- 1/4 red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons fresh lime juice
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- In a large bowl, combine the mixed greens, diced avocados, cherry tomatoes, orange segments, grapefruit segments, and red onion.
- In a small bowl, whisk together the olive oil, lime juice, honey, salt, and pepper until well combined.
- Drizzle the dressing over the salad and gently toss to combine, being careful not to mash the avocados.
