- 2 pounds catfish fillets
- 2 tablespoons olive oil
- 1 teaspoon garlic powder

- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 lemon, zested and juiced
- 1 lime, zested and juiced
- ¼ cup fresh parsley, chopped
- ¼ cup fresh cilantro, chopped
Instructions
- Preheat your oven to 400°F. Line a baking sheet with parchment paper or lightly grease it with cooking spray.
- In a small bowl, mix together the olive oil, garlic powder, onion powder, paprika, thyme, oregano, salt, and black pepper.
- In another bowl, combine the lemon zest, lime zest, lemon juice, lime juice, parsley, and cilantro.
- Pat the catfish fillets dry with paper towels and place them on the prepared baking sheet. Brush the fillets with the olive oil and spice mixture, ensuring they are evenly coated.
- Spoon the citrus and herb mixture over the fillets, spreading it out evenly.
