Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 ripe avocados, diced
- 1 cup cherry tomatoes, halved
- 1 small red onion, finely chopped
- 1 cup fresh cilantro, chopped
- Juice of 2 limes
- Zest of 1 lime
- 1 orange, segmented
Instructions
- In a medium bowl, toss the shrimp with olive oil, garlic powder, paprika, salt, and pepper until well coated.
- Heat a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side, or until they are pink and opaque. Remove from heat and let cool slightly.
- In a large mixing bowl, combine the diced avocados, cherry tomatoes, red onion, cilantro, lime juice, lime zest, and orange segments.
- Add the cooked shrimp to the salad mixture and gently toss to combine all ingredients.
- Serve immediately or chill in the refrigerator for 15-30 minutes to enhance the flavors.
