Description
Classic Lobster Newburg is a luxurious seafood dish featuring tender lobster meat in a creamy sauce, perfect for special occasions.
Ingredients
- 1 pound cooked lobster meat, chopped
- 2 tablespoons unsalted butter
- 1 small onion, finely chopped
- 1 cup heavy cream
- 1/2 cup milk
- 3 large egg yolks
- 1 tablespoon sherry or brandy
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- 1/4 teaspoon cayenne pepper (optional)
- 4 slices of buttered toast or puff pastry shells for serving
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the lobster meat and cook for an additional 2-3 minutes until heated through.
- In a separate bowl, whisk together the heavy cream, milk, egg yolks, sherry or brandy, Dijon mustard, salt, pepper, and cayenne pepper if using.
- Gradually pour the cream mixture into the skillet with the lobster, stirring constantly. Cook on low heat until the sauce thickens, about 5-7 minutes. Do not let it boil.
- Once thickened, remove from heat and serve immediately over buttered toast or in puff pastry shells. Garnish with chopped parsley.
Notes
- For a richer flavor, add a pinch of nutmeg to the sauce.
- Substitute lobster with shrimp or crab for a different seafood twist.
