Description

Classic Lobster Newburg is a luxurious seafood dish featuring tender lobster meat in a creamy sauce, perfect for special occasions.


Ingredients

  • 1 pound cooked lobster meat, chopped
  • 2 tablespoons unsalted butter
  • 1 small onion, finely chopped
  • 1 cup heavy cream
  • 1/2 cup milk
  • 3 large egg yolks
  • 1 tablespoon sherry or brandy
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1/4 teaspoon cayenne pepper (optional)
  • 4 slices of buttered toast or puff pastry shells for serving
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Stir in the lobster meat and cook for an additional 2-3 minutes until heated through.
  3. In a separate bowl, whisk together the heavy cream, milk, egg yolks, sherry or brandy, Dijon mustard, salt, pepper, and cayenne pepper if using.
  4. Gradually pour the cream mixture into the skillet with the lobster, stirring constantly. Cook on low heat until the sauce thickens, about 5-7 minutes. Do not let it boil.
  5. Once thickened, remove from heat and serve immediately over buttered toast or in puff pastry shells. Garnish with chopped parsley.

Notes
