Ingredients
- 2 pounds of Yukon gold potatoes, peeled and cut into 1-inch pieces
- 1 cup Greek yogurt
- 3 tablespoons Dijon mustard
- 2 tablespoons white wine vinegar
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon smoked paprika
- 1/2 cup green onions, finely sliced
- 1/2 cup bell pepper, finely diced
- 4 hard-boiled eggs, chopped

Instructions
- In a large saucepan, fill it with water and add the diced Yukon gold potatoes along with a sprinkle of sea salt. Bring the water to a rolling boil over medium heat and cook the potatoes until they are fork-tender, approximately 12-15 minutes. Drain the potatoes and allow them to cool to room temperature.
- In a separate bowl, whisk together the Greek yogurt, Dijon mustard, white wine vinegar, sea salt, black pepper, and smoked paprika until the mixture is creamy and well combined.
- Once the potatoes have cooled, carefully fold them into the yogurt mixture, ensuring they are evenly coated.
- Add the green onions, diced bell pepper, chopped hard-boiled eggs, and dill pickle relish to the potato mixture. Gently stir until all ingredients are well incorporated without breaking apart the potatoes.
- Transfer the potato salad to a serving dish and cover it with a lid or plastic wrap. Chill in the refrigerator for at least one hour to enhance the flavors.
- Before serving, taste the salad and adjust the seasoning if needed. Serve it cold for a refreshing side dish.
