  • 1/4 cup dill pickle relish

Instructions

  1. In a large saucepan, fill it with water and add the diced Yukon gold potatoes along with a sprinkle of sea salt. Bring the water to a rolling boil over medium heat and cook the potatoes until they are fork-tender, approximately 12-15 minutes. Drain the potatoes and allow them to cool to room temperature.
  2. In a separate bowl, whisk together the Greek yogurt, Dijon mustard, white wine vinegar, sea salt, black pepper, and smoked paprika until the mixture is creamy and well combined.
  3. Once the potatoes have cooled, carefully fold them into the yogurt mixture, ensuring they are evenly coated.
  4. Add the green onions, diced bell pepper, chopped hard-boiled eggs, and dill pickle relish to the potato mixture. Gently stir until all ingredients are well incorporated without breaking apart the potatoes.
  5. Transfer the potato salad to a serving dish and cover it with a lid or plastic wrap. Chill in the refrigerator for at least one hour to enhance the flavors.
