Description

Coconut Lime Chicken is a flavorful dish featuring marinated chicken thighs cooked to perfection, offering a delightful blend of coconut and lime flavors.

Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1 can (13.5 oz) coconut milk
  • 1/4 cup fresh lime juice (about 2 limes)
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon olive oil
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a large bowl, whisk together the coconut milk, lime juice, honey, minced garlic, cumin, salt, black pepper, and red pepper flakes (if using).
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or up to overnight for best flavor.
  3. Preheat your grill or a large skillet over medium-high heat. Add the olive oil to the skillet if using.
  4. Remove the chicken from the marinade, allowing excess marinade to drip off. Discard the remaining marinade.
  5. Grill or cook the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F and the chicken is golden brown.
  6. Remove the chicken from the heat and let it rest for 5 minutes before slicing.
  7. Serve the chicken garnished with fresh cilantro and lime wedges on the side.

Notes

  • For a spicier kick, add sliced jalapeños to the marinade.
  • Serve with a side of coconut rice or a fresh salad to complement the flavors.
