Coconut Pineapple Bites are a delicious and healthy treat made with crushed pineapple, shredded coconut, and almond flour, perfect for satisfying your sweet tooth.
Ingredients
- 1 cup crushed pineapple, drained
- 1 cup shredded unsweetened coconut
- 1/2 cup almond flour
- 1/4 cup honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips (optional)
Instructions
- In a mixing bowl, combine the crushed pineapple, shredded coconut, almond flour, honey (or maple syrup), vanilla extract, and salt. Mix until well combined.
- Refrigerate the mixture for about 30 minutes to help it firm up.
- Once chilled, use your hands to form small bite-sized balls, about 1 inch in diameter.
- If using chocolate, melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
- Dip each coconut pineapple ball into the melted chocolate, allowing any excess to drip off. Place them on a parchment-lined baking sheet.
- Refrigerate the chocolate-coated bites for at least 15 minutes to set the chocolate.
Notes
- For a tropical twist, add chopped macadamia nuts or dried mango to the mixture.
- Substitute agave syrup for honey or maple syrup for a vegan option.
