Ingredients

  • 2 pounds russet potatoes, peeled and cubed

  • 1 cup green cabbage, finely chopped

  • 1 cup green onions, sliced

  • 1/2 cup whole milk (or half-and-half for extra creaminess)

  • 1/4 cup unsalted butter

  • 1/2 teaspoon salt (adjust to taste)

  • 1/2 teaspoon black pepper (adjust to taste)


Instructions

  1. Prepare the Potatoes: Place the peeled and cubed potatoes in a large pot, cover them with salted water, and bring to a boil. Reduce heat to medium and cook for 15-20 minutes or until fork-tender. Drain and set aside.

  2. Cook the Cabbage and Onions: In a skillet over medium heat, melt the butter. Add the chopped cabbage and sauté for about 5-7 minutes until tender. Stir in the green onions and cook for another 2 minutes.

  3. Mash the Potatoes: In the same pot used for boiling, mash the drained potatoes until smooth. If you prefer a chunkier texture, leave some small lumps.

  4. Combine Ingredients: Pour the warm milk into the mashed potatoes and stir well. Add the cooked cabbage and green onions. Mix until fully incorporated and creamy.

  5. Season and Serve: Add salt and pepper to taste. Stir everything together, let the flavors meld for a couple of minutes, and serve warm.

Notes

  • For extra richness, substitute half the milk with heavy cream.

  • If you prefer a smoother consistency, blend the mixture with an immersion blender.

  • To add more depth, mix in crispy bacon bits or sautéed leeks.
