Ingredients

  • ⅓ cup + 2 tablespoons whipping cream
  • 1 tablespoon Imperial Sugar Extra Fine Granulated Sugar
  • 2 tablespoons unsalted butter
  • 1½ teaspoons peppermint extract
  • 22 ounces (2 bags) classic white chocolate chips
  • 8 mint candies or 4 peppermint candy canes, crushed (for garnish)

Instructions

  1. Crush the Peppermint Candies: Place mint candies or candy canes in a ziplock bag. Crush them into fine pieces using a rolling pin or heavy-bottomed cup. Set aside for garnish.
  2. Heat the Cream and Sugar: In a small saucepan, combine the whipping cream and granulated sugar. Heat over medium heat, stirring gently until the sugar dissolves and the cream is warm. Remove the pan from heat.
  3. Add Butter and Peppermint Extract: Stir in the unsalted butter and peppermint extract until fully combined and melted.
  4. Melt the White Chocolate Chips: Place white chocolate chips in a heatproof bowl. Pour the warm cream mixture over the chips and let it sit for 2 minutes. Stir until smooth. If needed, microwave the mixture in 10-second intervals, stirring between each, until fully melted and creamy.
  5. Chill the Mixture: Cover the bowl with plastic wrap and refrigerate for 1–2 hours, or until the mixture is firm enough to shape.
  6. Shape the Truffles: Once the mixture is firm, use a small cookie scoop or spoon to portion it into equal-sized pieces. Roll each portion into a smooth ball between your palms.
  7. Coat with Crushed Peppermint Candies: Roll each truffle in the crushed peppermint candies, pressing gently so the candies stick. Place the coated truffles on a parchment-lined baking tray.
  8. Chill to Set: Refrigerate the truffles for an additional 15–20 minutes to fully set. Serve these festive truffles on a decorative platter or pack them into gift boxes for loved ones. Store in an airtight container in the refrigerator for up to 1 week.
