Ingredients

For the Filling

  • 8 oz cream cheese, softened (1 cup)
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 4 jalapeños, deseeded and diced

For the Breading Station

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 tbsp water
  • 1 cup seasoned breadcrumbs

For Frying

  • 1 cup vegetable oil

Instructions

1. Prepare the Filling

  • In a medium bowl, combine softened cream cheese, shredded Monterey Jack cheese, shredded cheddar cheese, and diced jalapeños.
  • Mix thoroughly until the filling is smooth and evenly combined.

2. Shape the Bites

  • Using your hands or a small scoop, form the cheese mixture into small balls, approximately 1 inch in diameter.
  • Place the cheese balls onto a baking sheet lined with parchment paper.
  • Freeze for at least 30 minutes to help the cheese balls hold their shape during breading and frying.

3. Set Up the Breading Station

  • Place the all-purpose flour in one bowl.
  • In a second bowl, whisk together the eggs and 1 tablespoon of water.
  • In a third bowl, add the seasoned breadcrumbs.
  • Arrange the bowls in order for easy assembly: flour, egg wash, and breadcrumbs.

4. Bread the Bites

  • Take a frozen cheese ball and roll it in the flour, making sure to coat it fully. Shake off any excess flour.
  • Dip the floured ball into the egg mixture, letting the excess drip off.
  • Roll the ball in the breadcrumbs, ensuring it’s completely coated.
  • Repeat the process for all the cheese balls and place them back onto the baking sheet.

5. Fry the Bites

  • Heat vegetable oil in a deep skillet or Dutch oven over medium-high heat until it reaches 350°F (175°C). Use a kitchen thermometer for accuracy.
  • Fry the breaded cheese balls in small batches, being careful not to overcrowd the pan.
  • Cook each batch for 2-3 minutes, or until the bites are golden brown and crispy.
  • Remove the fried bites with a slotted spoon and place them on a plate lined with paper towels to drain any excess oil.

6. Serve and Enjoy

  • Serve the rattlesnake bites hot with your favorite dipping sauce. Popular options include ranch dressing, spicy aioli, or a tangy marinara sauce.
  • Enjoy immediately for the best flavor and texture!

Notes

  • Freezing Tip: Freezing the cheese balls before breading and frying is essential to prevent them from falling apart during cooking.
  • Adjust the Spice: For extra heat, keep some seeds in the jalapeños or add a pinch of cayenne pepper to the filling.
  • Baking Option: If you prefer a lighter version, bake the breaded bites in a preheated oven at 400°F (200°C) for 12-15 minutes, flipping halfway through.
  • Double Breading: For an extra crispy texture, repeat the egg wash and breadcrumb steps.
