Description

Delicious cornbread waffle bites served with a sweet honey butter syrup.


Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 1/2 cups milk
  • 1/4 cup vegetable oil
  • 1/2 cup unsalted butter (for syrup)
  • 1/4 cup honey

Instructions

  1. Preheat your waffle maker according to the manufacturer’s instructions.
  2. In a large bowl, whisk together the cornmeal, flour, baking powder, salt, and sugar.
  3. In another bowl, beat the egg, then add the milk and vegetable oil, mixing well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
  5. Lightly grease the waffle maker with non-stick spray or brush with oil.
  6. Pour about 1/4 cup of the batter onto the center of the waffle maker, close the lid, and cook until golden brown and crispy, about 3-5 minutes.
  7. Remove the waffle bites and repeat with the remaining batter.
  8. While the waffle bites are cooking, prepare the honey butter syrup by melting the butter in a small saucepan over low heat and stirring in the honey until well combined.
  9. Serve the cornbread waffle bites warm, drizzled with honey butter syrup.
