Description
Delicious cornbread waffle bites served with a sweet honey butter syrup.
Ingredients
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup granulated sugar
- 1 large egg
- 1 1/2 cups milk
- 1/4 cup vegetable oil
- 1/2 cup unsalted butter (for syrup)
- 1/4 cup honey
Instructions
- Preheat your waffle maker according to the manufacturer’s instructions.
- In a large bowl, whisk together the cornmeal, flour, baking powder, salt, and sugar.
- In another bowl, beat the egg, then add the milk and vegetable oil, mixing well.
- Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
- Lightly grease the waffle maker with non-stick spray or brush with oil.
- Pour about 1/4 cup of the batter onto the center of the waffle maker, close the lid, and cook until golden brown and crispy, about 3-5 minutes.
- Remove the waffle bites and repeat with the remaining batter.
- While the waffle bites are cooking, prepare the honey butter syrup by melting the butter in a small saucepan over low heat and stirring in the honey until well combined.
- Serve the cornbread waffle bites warm, drizzled with honey butter syrup.
Notes
- For a savory twist, add 1/2 cup of shredded cheddar cheese or cooked bacon bits to the batter.
- For a sweeter option, mix in 1/2 cup of fresh blueberries or chopped strawberries into the batter before cooking.
