Ingredients

  • 3 envelopes (7g each) unflavored gelatin
  • ¾ cup water, divided
  • 2 cups granulated sugar
  • ½ cup light corn syrup
  • 1 teaspoon cotton candy flavoring
  • Gel food coloring (pink, blue, or any color of choice)
  • ½ cup powdered sugar
  • ¼ cup cornstarch

Instructions

  1. Prepare the Pan: Line a 9×9-inch baking dish with parchment paper and lightly grease it.
  2. Bloom the Gelatin: In a stand mixer bowl, combine ½ cup cold water and gelatin. Let sit for 5-10 minutes until thickened.
  3. Make the Sugar Syrup: In a saucepan, heat sugar, corn syrup, salt, and remaining ¼ cup water over medium heat. Stir until sugar dissolves, then bring to 240°F (115°C) using a candy thermometer.
  4. Whip the Marshmallow Mixture: Slowly pour the hot syrup into the bloomed gelatin while mixing on low speed. Gradually increase to high and beat for 10-12 minutes until thick and glossy. Add cotton candy flavoring and food coloring, mixing until combined.
  5. Set the Marshmallows: Pour the mixture into the prepared pan, smooth the top, and let set at room temperature for 6-8 hours or overnight.
  6. Cut and Coat: Mix powdered sugar and cornstarch, then dust a surface. Remove marshmallows from the pan, cut into squares or shapes, and coat in the powdered sugar mixture.
