Ingredients

  • 2 whole heads garlic, peeled
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 tbsp butter
  • 6 cups chicken or vegetable broth
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper, to taste
  • 4 egg yolks
  • ½ cup grated Parmesan cheese
  • Crusty bread, for serving
  • Fresh parsley (optional, for garnish)

Instructions

 

  1. Sauté Aromatics: Heat olive oil and butter in a large pot over medium heat. Sauté the chopped onion for about 5 minutes until softened.
  2. Infuse Garlic Flavor: Add peeled garlic cloves and cook for 2-3 minutes, stirring frequently.
  3. Simmer the Broth: Pour in the broth, add thyme and bay leaves. Bring to a boil, then reduce to a gentle simmer for 30 minutes.
  4. Final Seasoning: Remove thyme sprigs and bay leaves. Season with salt and pepper to taste.
  5. Enrich the Soup: In a small bowl, whisk together egg yolks and Parmesan cheese. Slowly temper with a ladle of hot soup, then whisk back into the pot. Let simmer for another 5 minutes, stirring constantly.
  6. Serve & Enjoy: Ladle into bowls, garnish with fresh parsley, and serve hot with crusty bread for dipping.
