Ingredients
- 2 whole heads garlic, peeled
- 1 tbsp olive oil
- 1 onion, chopped
- 2 tbsp butter
- 6 cups chicken or vegetable broth
- 2 sprigs fresh thyme
- 2 bay leaves
- Salt and pepper, to taste
- 4 egg yolks
- ½ cup grated Parmesan cheese
- Crusty bread, for serving
- Fresh parsley (optional, for garnish)
Instructions
- Sauté Aromatics: Heat olive oil and butter in a large pot over medium heat. Sauté the chopped onion for about 5 minutes until softened.
- Infuse Garlic Flavor: Add peeled garlic cloves and cook for 2-3 minutes, stirring frequently.
- Simmer the Broth: Pour in the broth, add thyme and bay leaves. Bring to a boil, then reduce to a gentle simmer for 30 minutes.
- Final Seasoning: Remove thyme sprigs and bay leaves. Season with salt and pepper to taste.
- Enrich the Soup: In a small bowl, whisk together egg yolks and Parmesan cheese. Slowly temper with a ladle of hot soup, then whisk back into the pot. Let simmer for another 5 minutes, stirring constantly.
