Description

Experience the comforting embrace of rich garlic, aromatic herbs, and a creamy texture with this traditional French garlic soup. Perfect for cozy nights or as a sophisticated starter, this recipe is sure to impress with its simple ingredients and complex flavors.

Ingredients

For the Soup:

  • 2 whole heads garlic, peeled (providing the rich, star flavor)
  • 1 tbsp olive oil (for sautéing the onions)
  • 1 medium onion, chopped (adds sweetness and depth)
  • 2 tbsp butter (for creaminess and richness)
  • 6 cups chicken or vegetable broth (forms the savory base)
  • 2 sprigs fresh thyme (infuses earthy notes)
  • 2 bay leaves (adds subtle herbal flavor)
  • Salt and pepper, to taste (balances and enhances the flavors)
  • 4 egg yolks (for a velvety consistency)
  • ½ cup grated Parmesan cheese (richness and umami)
  • Crusty bread (for serving, perfect for dipping)
  • Fresh parsley (optional, for garnish)

Instructions

  • Prepare Your Ingredients:
    • Peel the garlic cloves, removing any skins or blemishes.
    • Chop the onion finely and set aside.
  • Sauté the Aromatics:
    • Heat olive oil and butter in a large pot over medium heat.
    • Add the chopped onion and sauté for about 5 minutes, stirring occasionally, until softened and translucent.
  • Add Garlic and Herbs:
    • Add the peeled garlic cloves to the pot and cook for 2–3 minutes, stirring frequently until fragrant.
  • Add Broth and Simmer:
    • Pour in the chicken or vegetable broth and add the fresh thyme and bay leaves.
    • Bring the mixture to a boil, then reduce the heat to a simmer and cook for 30 minutes, allowing the flavors to meld together.
  • Remove Herbs and Season:
    • Remove the thyme sprigs and bay leaves from the pot. Season the soup with salt and pepper to taste.
  • Incorporate Egg Yolks and Parmesan:
    • In a small bowl, whisk together the egg yolks and grated Parmesan cheese.
    • Gradually temper the egg mixture by adding a ladle of hot soup, whisking continuously to prevent curdling.
    • Pour the tempered mixture back into the pot, stirring constantly.
  • Finish and Serve:
    • Simmer the soup for an additional 5 minutes, stirring frequently until it thickens slightly.
    • Ladle the soup into bowls and garnish with fresh parsley.
    • Serve hot with crusty bread on the side for dipping.

Notes

  • Use Fresh Garlic: Fresh garlic cloves provide a sweeter, milder flavor compared to pre-minced or jarred garlic.
  • Don’t Rush the Cooking Process: Allow the garlic and onion to cook slowly to enhance their sweetness and depth of flavor.
  • Temper the Eggs Properly: Always whisk the egg yolks with a ladle of hot soup before adding them to prevent scrambling and to ensure a smooth texture.
