Ingredients
For the Cowboy Butter:
- 8 tbsp (120g) unsalted butter, softened
- 2 tbsp fresh parsley, finely diced
- 1 tbsp fresh chives, finely diced
- 1/2 tsp fresh thyme leaves, finely diced
- 1 clove garlic, minced
- 2 tsp lemon juice
- 1 tsp Dijon mustard
- 3/4 tsp smoked paprika
- 1/2 tsp Worcestershire sauce
- 1/2 tsp chili flakes (adjust to preference)
- 1/2 tsp salt (or to taste)
- 1/4 tsp black pepper (or to taste)
For the Steaks:
- 2 sirloin steaks (220g/8oz each), at room temperature
- 1 tbsp vegetable oil
- Salt and black pepper, as needed
Instructions
1. Prepare the Cowboy Butter:
- In a small mixing bowl, combine all cowboy butter ingredients.
- Mix well until smooth and well incorporated.
- Set aside at room temperature if using immediately, or refrigerate if preparing in advance.
2. Perfectly Sear the Steaks:
- Pat the steaks dry with paper towels and season both sides generously with salt and black pepper.
- Heat a large cast-iron skillet over high heat until smoking hot.
- Add the vegetable oil and heat for about 5-10 seconds.
- Place the steaks in the pan and sear for 2 minutes per side for medium-rare (adjust cooking time based on preference).
- Remove the steaks from the pan and allow them to rest for at least 5 minutes.
3. Serve:
- Top each steak with generous spoonfuls of cowboy butter.
- Allow the butter to melt over the warm steak before serving.
Notes
- Let the steaks sit at room temperature for 30 minutes before cooking for even results.
- Resting the steak after cooking helps retain its juices for optimal tenderness.
- Leftover cowboy butter can be stored in the refrigerator for up to 5 days or frozen for later use.
- Cowboy butter pairs well with grilled chicken, seafood, roasted vegetables, and crusty bread.
