Ingredients

For the Soup:

  • 1 pound Lean ground beef (95%)
  • 1/2 tablespoon Chili powder
  • 1/2 tablespoon Cumin
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 15 oz Canned seasoned pinto beans
  • 10 oz Canned diced tomatoes with green chile
  • 2 Russet potatoes (peeled, diced 1 inch)
  • 8 oz Frozen mixed vegetables
  • 8 oz Frozen whole-kernel corn
  • 34 cups Beef broth

Instructions

  • Brown the Ground Beef
    Heat a large pot or 8-quart Dutch oven over medium-high heat. Add the ground beef along with chili powder, cumin, garlic powder, and onion powder. Cook until the beef is browned, breaking it apart into small pieces as it cooks. Drain any excess fat.
  • Add the Remaining Ingredients
    Once the beef is browned, add the canned pinto beans, diced tomatoes with green chiles, diced potatoes, frozen mixed vegetables, frozen corn, and beef broth. Stir everything together to combine the flavors.
  • Bring to a Boil
    Turn the heat to high and bring the soup to a boil.
  • Simmer and Cook
    Once the soup reaches a boil, reduce the heat to low. Cover the pot and let it simmer for about 20 minutes, stirring occasionally. Check the potatoes to ensure they’re tender.
  • Season and Serve
    Taste the soup and adjust the seasoning with salt and pepper as needed. Ladle the soup into bowls and serve hot.
