Ingredients
- 30–32 oz frozen hashbrowns, thawed
- ½ cup butter, melted
- 1 teaspoon bouillon (chicken, mushroom, or vegetable; optional but recommended)
- 1 medium onion, finely chopped
- 2 cups sour cream or plain Greek yogurt (16 oz)
- 2–3 cups shredded cheese (Colby Jack or Sharp Cheddar recommended; reserve ½–1 cup for topping)
- 1–2 teaspoons kosher salt, to taste
- ¼ – ½ teaspoon black pepper
Instructions
1. Prepare the Oven and Dish
- Preheat the oven to 350°F (175°C).
- Lightly grease a 9×13-inch baking dish with butter or nonstick spray.
2. Make the Base Mixture
- In a large mixing bowl, combine the melted butter, bouillon (if using), chopped onion, sour cream, 2 cups of shredded cheese, salt, and pepper.
- Mix well until smooth and fully combined.
3. Fold in the Hashbrowns
- Add the thawed hashbrowns to the cheese mixture.
- Gently fold them in, ensuring the hashbrowns are evenly coated without breaking apart.
4. Assemble the Casserole
- Spread the hashbrown mixture evenly into the prepared baking dish.
- Sprinkle the reserved ½-1 cup of shredded cheese evenly over the top.
5. Bake
- Place the dish in the preheated oven and bake for 40-50 minutes.
- Bake until the casserole is bubbly, golden brown on top, and the edges are slightly crisp.
6. Cool and Serve
- Allow the casserole to cool for 5-10 minutes before serving. This makes it easier to slice and serve neat portions.
