  • 70 ml soy sauce
  • 1 tbsp tomato paste
  • 1 tsp sugar
  • 1 tbsp sweet chili sauce
  • 4 cloves garlic, minced
  • Spring onion, chopped (for garnish)
  • Creamed butter (optional, for serving)

Instructions

  • Prepare the Chicken:

    • Season the chicken thighs on both sides with salt, black pepper, paprika, and oregano.
    • Heat 1 tbsp olive oil and a bit of vegetable oil in a large skillet over medium-high heat.
    • Sear the chicken thighs for about 5-7 minutes per side until golden brown. Remove from skillet and set aside.
  • Cook the Vegetables:

    • In the same skillet, add chopped onion and minced garlic. Cook for 2-3 minutes until the onion becomes translucent and the garlic is fragrant.
    • Add sliced carrots and bell pepper. Cook for 5 minutes, stirring occasionally.
    • Add mushrooms and zucchini, cooking for another 5-7 minutes until vegetables are tender.
    • Stir in the chopped tomatoes and cook for an additional 2-3 minutes.
  • Prepare the Sauce:

    • In a small bowl, mix soy sauce, tomato paste, sugar, and sweet chili sauce until combined.
    • Pour the sauce over the vegetables in the skillet and stir well.
  • Combine and Simmer:

    • Return the seared chicken thighs to the skillet, nestling them among the vegetables.
    • Reduce the heat to low, cover the skillet, and simmer for 20-25 minutes until the chicken is fully cooked and infused with the sauce.
