- 12 oz angel hair pasta

- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon red pepper flakes (optional)
For the Creamy Sauce:
- ¼ cup dry white wine (or chicken broth)
- 1 can (14 oz) petite diced tomatoes, drained
- ½ to 1 cup heavy cream
- 1 teaspoon Italian seasoning
- Juice of ½ lemon
- ½ cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley (plus more for garnish)
Instructions
Step 1: Cook the Pasta
- Bring a large pot of salted water to a boil and cook the angel hair pasta according to package instructions until al dente.
- Reserve ½ cup of pasta water, then drain and set aside.
Step 2: Sauté the Shrimp
- Season the shrimp with salt, black pepper, and red pepper flakes.
- Heat olive oil in a large skillet over medium-high heat.
- Add shrimp and minced garlic, cooking for 2 minutes per side, or until shrimp turn pink and opaque.
- Remove shrimp from the pan and set aside.
Step 3: Make the Sauce
- In the same skillet, pour in the white wine to deglaze the pan, scraping up any bits from the bottom. Let it simmer for 1 minute.
- Stir in diced tomatoes, heavy cream, Italian seasoning, and Parmesan cheese. Let the sauce simmer until slightly thickened.
- Add the lemon juice and fresh parsley, stirring to combine.
