Ingredients

For the Shrimp & Pasta:

  • 1 lb large shrimp, peeled and deveined
  • 12 oz angel hair pasta
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)

For the Creamy Sauce:

  • ¼ cup dry white wine (or chicken broth)
  • 1 can (14 oz) petite diced tomatoes, drained
  • ½ to 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Juice of ½ lemon
  • ½ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley (plus more for garnish)

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil and cook the angel hair pasta according to package instructions until al dente.
  2. Reserve ½ cup of pasta water, then drain and set aside.

Step 2: Sauté the Shrimp

  1. Season the shrimp with salt, black pepper, and red pepper flakes.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add shrimp and minced garlic, cooking for 2 minutes per side, or until shrimp turn pink and opaque.
  4. Remove shrimp from the pan and set aside.

Step 3: Make the Sauce

  1. In the same skillet, pour in the white wine to deglaze the pan, scraping up any bits from the bottom. Let it simmer for 1 minute.
  2. Stir in diced tomatoes, heavy cream, Italian seasoning, and Parmesan cheese. Let the sauce simmer until slightly thickened.
  3. Add the lemon juice and fresh parsley, stirring to combine.

Step 4: Assemble the Pasta

  1. Return the cooked shrimp and angel hair pasta to the skillet, tossing everything together until evenly coated in the sauce.
  2. If the sauce is too thick, add some of the reserved pasta water until it reaches your desired consistency.

Step 5: Serve & Garnish

  1. Plate the pasta and garnish with extra Parmesan cheese and chopped parsley.
  2. Serve immediately and enjoy!
