- 1 teaspoon onion powder
- 1 teaspoon dried parsley
- 2 tablespoons olive oil
- ½ cup flour
- 3 tablespoons butter
- 1 teaspoon salt
- 1 teaspoon black pepper
For the Sauce:
- 1½ cups dry white wine (or chicken broth as a substitute)
- 2 cups mushrooms, halved
- 2 cloves garlic, minced
- ½ cup heavy cream
- ½ cup shredded Asiago cheese
Instructions
- Prepare the Chicken:
- Place chicken breasts between plastic wrap and pound to ¼-inch thickness using a meat mallet.
- Cut each breast into three tender-sized pieces.
- Coat the chicken pieces in flour, shaking off excess.
- Heat 1 tablespoon of olive oil and butter in a large skillet over medium-high heat.
- Sauté chicken for about 4 minutes per side until golden brown. Remove from skillet and set aside.
- Sauté the Aromatics:
- In the same skillet, add the remaining olive oil.
- Stir in onion powder, mushrooms, and minced garlic.
- Sauté until mushrooms are browned and fragrant.
- Make the Creamy Asiago Sauce:
- Deglaze the pan by pouring in white wine, scraping up browned bits from the skillet.
- Add the cooked chicken back into the skillet and sprinkle with parsley.
- Bring to a boil, reduce heat, cover, and let simmer for 15 minutes.
- Remove chicken from the pan once again and set aside.
- Stir in heavy cream and heat through.
- Add Asiago cheese, stirring constantly over low heat until fully melted and sauce thickens.
- Final Touches:
- Return the chicken to the skillet, ensuring each piece is coated in the creamy sauce.
- Let it warm through for a few minutes.
- Serve hot with your favorite side dish.
Notes
- Substitute Asiago with Parmesan, Gruyère, or Mozzarella for a different flavor profile.
- Pair with pasta, mashed potatoes, or roasted vegetables for a complete meal.
- To make it a one-pan meal, add spinach or sun-dried tomatoes for an extra burst of flavor.
- Store leftovers in an airtight container for up to three days and reheat gently.
