Ingredients

For the Chicken:

  • 1 lb boneless, skinless chicken breasts
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley
  • 2 tablespoons olive oil
  • ½ cup flour
  • 3 tablespoons butter
  • 1 teaspoon salt
  • 1 teaspoon black pepper

For the Sauce:

  • 1½ cups dry white wine (or chicken broth as a substitute)
  • 2 cups mushrooms, halved
  • 2 cloves garlic, minced
  • ½ cup heavy cream
  • ½ cup shredded Asiago cheese

Instructions

  1. Prepare the Chicken:
    • Place chicken breasts between plastic wrap and pound to ¼-inch thickness using a meat mallet.
    • Cut each breast into three tender-sized pieces.
    • Coat the chicken pieces in flour, shaking off excess.
    • Heat 1 tablespoon of olive oil and butter in a large skillet over medium-high heat.
    • Sauté chicken for about 4 minutes per side until golden brown. Remove from skillet and set aside.
  2. Sauté the Aromatics:
    • In the same skillet, add the remaining olive oil.
    • Stir in onion powder, mushrooms, and minced garlic.
    • Sauté until mushrooms are browned and fragrant.
  3. Make the Creamy Asiago Sauce:
    • Deglaze the pan by pouring in white wine, scraping up browned bits from the skillet.
    • Add the cooked chicken back into the skillet and sprinkle with parsley.
    • Bring to a boil, reduce heat, cover, and let simmer for 15 minutes.
    • Remove chicken from the pan once again and set aside.
    • Stir in heavy cream and heat through.
    • Add Asiago cheese, stirring constantly over low heat until fully melted and sauce thickens.
  4. Final Touches:
    • Return the chicken to the skillet, ensuring each piece is coated in the creamy sauce.
    • Let it warm through for a few minutes.
    • Serve hot with your favorite side dish.
