Description

Creamy Bacon Mac and Cheese is the ultimate comfort food, blending tender elbow macaroni with a rich, velvety cheese sauce and crispy bacon. Whether served as a cozy weeknight meal or a party side dish, it’s a cheesy, savory delight that brings smiles to every bite!

Ingredients

  • 8 ounces elbow macaroni

  • 4 slices bacon, chopped

  • 2 tablespoons unsalted butter

  • 2 tablespoons all-purpose flour

  • 2 cups whole milk

  • 2 cups shredded sharp cheddar cheese

  • 1 cup shredded mozzarella cheese

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • Salt and pepper, to taste

  • 1/2 cup breadcrumbs (optional, for topping)

  • Fresh parsley, chopped (optional, for garnish)

Instructions

  • Cook the Pasta
Bring a large pot of salted water to a boil. Cook the elbow macaroni until al dente (about 7–9 minutes). Drain and set aside.

  • Cook the Bacon
In a large skillet over medium heat, cook the chopped bacon until crispy (5–7 minutes). Remove bacon with a slotted spoon and set aside on a paper towel-lined plate. Reserve a bit of the bacon grease in the pan for flavor.

  • Make the Cheese Sauce
Add butter to the skillet with the reserved bacon fat. Once melted, whisk in flour and cook for 1 minute. Gradually whisk in milk, stirring continuously until the sauce thickens (about 3–5 minutes).

  • Add the Cheese
Lower the heat and stir in shredded cheddar and mozzarella cheese until melted and smooth. Add garlic powder, onion powder, salt, and pepper to taste.

  • Combine Pasta and Bacon
Stir the cooked macaroni and crispy bacon into the cheese sauce until everything is well coated.

  • Optional – Broil with Breadcrumbs
Preheat your oven’s broiler. Transfer mac and cheese to a baking dish, sprinkle with breadcrumbs, and broil for 2–3 minutes until golden brown. Watch closely to avoid burning.

  • Serve
Let cool slightly, garnish with chopped parsley if desired, and enjoy!

Notes

  • For a flavor twist, use a mix of cheeses like gouda, fontina, or pepper jack.

  • Add sautéed veggies like broccoli, spinach, or mushrooms for extra nutrition.

  • Use turkey bacon for a leaner option.

  • To make ahead, assemble the mac and cheese (before broiling), refrigerate, then bake at 350°F for 25–30 minutes.
