Ingredients
-
8 ounces elbow macaroni
-
4 slices bacon, chopped
-
2 tablespoons unsalted butter
-
2 tablespoons all-purpose flour
-
2 cups whole milk
-
2 cups shredded sharp cheddar cheese
-
1 cup shredded mozzarella cheese
-
1 teaspoon garlic powder
-
1 teaspoon onion powder
-
Salt and pepper, to taste
-
1/2 cup breadcrumbs (optional, for topping)
-
Fresh parsley, chopped (optional, for garnish)
Instructions
-
Cook the Pasta
Bring a large pot of salted water to a boil. Cook the elbow macaroni until al dente (about 7–9 minutes). Drain and set aside. -
Cook the Bacon
In a large skillet over medium heat, cook the chopped bacon until crispy (5–7 minutes). Remove bacon with a slotted spoon and set aside on a paper towel-lined plate. Reserve a bit of the bacon grease in the pan for flavor. -
Make the Cheese Sauce
Add butter to the skillet with the reserved bacon fat. Once melted, whisk in flour and cook for 1 minute. Gradually whisk in milk, stirring continuously until the sauce thickens (about 3–5 minutes). -
Add the Cheese
Lower the heat and stir in shredded cheddar and mozzarella cheese until melted and smooth. Add garlic powder, onion powder, salt, and pepper to taste. -
Combine Pasta and Bacon
Stir the cooked macaroni and crispy bacon into the cheese sauce until everything is well coated. -
Optional – Broil with Breadcrumbs
Preheat your oven’s broiler. Transfer mac and cheese to a baking dish, sprinkle with breadcrumbs, and broil for 2–3 minutes until golden brown. Watch closely to avoid burning.
-
Serve
Let cool slightly, garnish with chopped parsley if desired, and enjoy!
Notes
-
For a flavor twist, use a mix of cheeses like gouda, fontina, or pepper jack.
-
Add sautéed veggies like broccoli, spinach, or mushrooms for extra nutrition.
-
Use turkey bacon for a leaner option.
-
To make ahead, assemble the mac and cheese (before broiling), refrigerate, then bake at 350°F for 25–30 minutes.
