This delicious dish combines creamy cheese chicken fillets with crispy and flavorful potato pancakes. Perfect for a family dinner or a gathering with friends, this meal offers a touch of comfort and satisfaction in every bite. 

Ingredients 

For the Chicken: 

  • 2 chicken fillets 
  • Salt, to taste 
  • Ground black pepper, to taste 
  • 100 g butter 
  • 100 g cheese (your choice, grated or cut into small pieces) 
  • 1 bunch of dill, chopped 
  • Salt, to taste 
  • Ground black pepper, to taste 

For the Potato Pancakes: 

  • 6-7 potatoes 
  • 1 tsp salt 
  • ½ tsp ground black pepper 
  • ½ tsp turmeric 
  • 1 egg 
  • 2-3 garlic cloves, minced 
  • 1 cup flour 
  • 30 ml vegetable oil 

Instructions 

Prepare the Chicken: 

  1. Season the Chicken
  • Season the chicken fillets with salt and ground black pepper on both sides. 
  1. Cook the Chicken
  • Melt 50 g of butter in a skillet over medium heat. 
  • Add the chicken fillets and cook until golden brown and cooked through, about 5-7 minutes per side.  
  1. Make the Cheese Sauce
  • In the same skillet, melt the remaining 50 g of butter. 
  • Incorporate the cheese, stirring continuously until it melts and blends smoothly into the mixture. 
  • Mix in the chopped dill, then add salt and pepper to your liking. 
  • Return the chicken fillets to the skillet, coating them in the cheese sauce. Let it simmer for a few minutes until the chicken is well-coated and heated through. 

Prepare the Potato Pancakes: 

  1. Prepare the Potatoes
  • Peel and grate the potatoes. Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture. 
  1. Mix the Ingredients
  • In a large bowl, combine the grated potatoes, salt, ground black pepper, turmeric, egg, minced garlic, and flour. Mix until well combined. 
  1. Cook the Pancakes
  • Warm the vegetable oil in a sizable skillet over medium heat. 
  • Drop spoonfuls of the potato mixture into the skillet, flattening them with the back of a spoon to form pancakes. 
  • Fry each side for 3-4 minutes, until they achieve a golden-brown, crispy texture.  
  • Transfer the pancakes to a paper towel-lined plate to drain excess oil. 

Serve: 

  1. Assemble the Dish
  • Place the potato pancakes on a serving plate. 
  • Top with the creamy cheese chicken fillets. 
  • Garnish with additional chopped dill, if desired.
