Ingredients
Filling and Enchiladas:
- Cream of chicken soup: 1 (20 oz) can
- Salsa: 1 cup
- Sour cream: 1 cup
- Diced green chiles: 1 (4 oz) can
- Salt: 1 tsp
- Chili powder: 1 tsp
- Shredded cheese: 2½ cups (divided)
- Shredded chicken: 3 cups
- Flour tortillas: 10
Optional Toppings:
- Diced tomatoes: To taste
- Sliced avocado: To taste
- Sour cream: To taste
- Fresh cilantro: To taste
Instructions
- Preheat Your Oven
- Preheat the oven to 350°F (175°C).
- Spray a 9×13-inch baking dish with nonstick cooking spray.
- Prepare the Filling
- In a large bowl, combine the cream of chicken soup, salsa, sour cream, diced green chiles, salt, chili powder, and 1 cup of shredded cheese. Stir until fully combined.
- Separate the Sauce
- Remove 1 cup of the sauce mixture and set it aside for topping the enchiladas.
- Mix Chicken with the Filling
- Add the shredded chicken to the remaining sauce in the bowl and mix until the chicken is evenly coated.
- Assemble the Enchiladas
- Lay one tortilla flat and scoop about ¼ cup of the chicken mixture onto the center. Roll tightly and place seam-side down in the prepared baking dish. Repeat with the remaining tortillas.
- Add Sauce and Cheese
- Spread the reserved sauce evenly over the rolled tortillas. Sprinkle the remaining 1½ cups of shredded cheese over the top.
- Bake to Perfection
- Bake in the preheated oven for 30 minutes, or until the cheese is melted and bubbly.
- Let Cool and Serve
- Remove from the oven and let cool for 5–10 minutes. Garnish with diced tomatoes, sliced avocado, sour cream, and fresh cilantro, if desired.
