Ingredients

Filling and Enchiladas:

  • Cream of chicken soup: 1 (20 oz) can
  • Salsa: 1 cup
  • Sour cream: 1 cup
  • Diced green chiles: 1 (4 oz) can
  • Salt: 1 tsp
  • Chili powder: 1 tsp
  • Shredded cheese: 2½ cups (divided)
  • Shredded chicken: 3 cups
  • Flour tortillas: 10

Optional Toppings:

  • Diced tomatoes: To taste
  • Sliced avocado: To taste
  • Sour cream: To taste
  • Fresh cilantro: To taste

Instructions

  1. Preheat Your Oven
    • Preheat the oven to 350°F (175°C).
    • Spray a 9×13-inch baking dish with nonstick cooking spray.
  2. Prepare the Filling
    • In a large bowl, combine the cream of chicken soup, salsa, sour cream, diced green chiles, salt, chili powder, and 1 cup of shredded cheese. Stir until fully combined.
  3. Separate the Sauce
    • Remove 1 cup of the sauce mixture and set it aside for topping the enchiladas.
  4. Mix Chicken with the Filling
    • Add the shredded chicken to the remaining sauce in the bowl and mix until the chicken is evenly coated.
  5. Assemble the Enchiladas
    • Lay one tortilla flat and scoop about ¼ cup of the chicken mixture onto the center. Roll tightly and place seam-side down in the prepared baking dish. Repeat with the remaining tortillas.
  6. Add Sauce and Cheese
    • Spread the reserved sauce evenly over the rolled tortillas. Sprinkle the remaining 1½ cups of shredded cheese over the top.
  7. Bake to Perfection
    • Bake in the preheated oven for 30 minutes, or until the cheese is melted and bubbly.
  8. Let Cool and Serve
    • Remove from the oven and let cool for 5–10 minutes. Garnish with diced tomatoes, sliced avocado, sour cream, and fresh cilantro, if desired.
