Ingredients

- 1/4 teaspoon black pepper
- 4 cups chicken broth
- 1 pound cooked chicken, shredded
- 1 (16-ounce) package potato gnocchi
- 1 cup heavy cream
- 2 cups fresh spinach
- 1/4 cup grated Parmesan cheese
Optional Additions:
- 1/2 cup sautéed mushrooms
- 1/2 cup diced tomatoes
- 1/4 teaspoon red pepper flakes
- 2 tablespoons fresh chopped basil or parsley
Instructions

Sauté Aromatics
In a large pot, heat olive oil over medium heat. Add onion and sauté for 3-4 minutes until softened. Stir in garlic and cook for another 1 minute. -
Cook the Veggies
Add diced carrots and celery. Sauté for 5-7 minutes until tender. Stir in thyme, oregano, salt, and pepper. -
Add Broth & Chicken
Pour in chicken broth and add shredded chicken. Bring to a gentle boil and let simmer for 5 minutes. -
Stir in Gnocchi
Add gnocchi and cook for 4-5 minutes or until gnocchi float to the top and are tender. -
Cream & Spinach
Stir in heavy cream, fresh spinach, and Parmesan cheese. Simmer for 2-3 minutes until spinach is wilted and soup is heated through.
