Description

Ingredients

Base Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups chicken broth
  • 1 pound cooked chicken, shredded
  • 1 (16-ounce) package potato gnocchi
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1/4 cup grated Parmesan cheese

Optional Additions:

  • 1/2 cup sautéed mushrooms
  • 1/2 cup diced tomatoes
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons fresh chopped basil or parsley

Instructions

  • Sauté Aromatics
    In a large pot, heat olive oil over medium heat. Add onion and sauté for 3-4 minutes until softened. Stir in garlic and cook for another 1 minute.

  • Cook the Veggies
    Add diced carrots and celery. Sauté for 5-7 minutes until tender. Stir in thyme, oregano, salt, and pepper.

  • Add Broth & Chicken
    Pour in chicken broth and add shredded chicken. Bring to a gentle boil and let simmer for 5 minutes.

  • Stir in Gnocchi
    Add gnocchi and cook for 4-5 minutes or until gnocchi float to the top and are tender.

  • Cream & Spinach
    Stir in heavy cream, fresh spinach, and Parmesan cheese. Simmer for 2-3 minutes until spinach is wilted and soup is heated through.

 

  • Finish & Serve
    Taste and adjust seasoning as needed. Ladle into bowls and serve warm with crusty bread or salad on the side.

  • Use store-bought or homemade gnocchi—just watch the cook time.
  • Substitute half-and-half or whole milk for a lighter version.
  • To make vegetarian, skip the chicken and use vegetable broth with extra veggies like mushrooms or zucchini.
