Description
A creamy and delicious chicken and spinach casserole that is easy to prepare and perfect for family dinners.
Ingredients
- 3 cups cooked chicken, shredded
- 2 cups fresh spinach, chopped
- 1 cup cream of chicken soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup cooked rice
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 cup breadcrumbs (optional)
- 2 tablespoons olive oil (if using breadcrumbs)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, chopped spinach, cream of chicken soup, sour cream, cooked rice, garlic powder, onion powder, salt, pepper, and paprika. Mix until well combined.
- Transfer the mixture to a greased 9×13 inch baking dish, spreading it evenly.
- Sprinkle the shredded cheddar cheese over the top of the chicken and spinach mixture.
- If using breadcrumbs, mix them with olive oil in a small bowl and then sprinkle over the cheese layer.
- Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the top is golden brown.
- Remove from the oven and let it cool for about 5 minutes before serving.
Notes
- For a lighter version, substitute Greek yogurt for sour cream.
- Add a cup of cooked mushrooms or bell peppers for extra flavor and nutrition.
