Description

A creamy and delicious chicken and spinach casserole that is easy to prepare and perfect for family dinners.


Ingredients

  • 3 cups cooked chicken, shredded
  • 2 cups fresh spinach, chopped
  • 1 cup cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup cooked rice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 cup breadcrumbs (optional)
  • 2 tablespoons olive oil (if using breadcrumbs)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, chopped spinach, cream of chicken soup, sour cream, cooked rice, garlic powder, onion powder, salt, pepper, and paprika. Mix until well combined.
  3. Transfer the mixture to a greased 9×13 inch baking dish, spreading it evenly.
  4. Sprinkle the shredded cheddar cheese over the top of the chicken and spinach mixture.
  5. If using breadcrumbs, mix them with olive oil in a small bowl and then sprinkle over the cheese layer.
  6. Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the top is golden brown.
  7. Remove from the oven and let it cool for about 5 minutes before serving.

Notes

  • For a lighter version, substitute Greek yogurt for sour cream.
