Description

A delicious and creamy coconut curry salmon dish infused with Caribbean flavors, perfect for a delightful meal.


Ingredients

  • 2 tablespoons coconut oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1 can (14 ounces) coconut milk
  • 1 tablespoon lime juice
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 salmon fillets (about 6 ounces each)
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 1/4 cup fresh cilantro, chopped
  • Cooked rice or quinoa, for serving

Instructions

  1. In a large skillet, heat the coconut oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
  2. Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
  3. Add the curry powder, ground cumin, and turmeric to the skillet, stirring well to combine. Cook for another minute.
  4. Pour in the coconut milk, lime juice, soy sauce, brown sugar, salt, and black pepper. Stir until the mixture is smooth and well combined.
  5. Gently place the salmon fillets into the skillet, skin-side down. Spoon some of the sauce over the top of the salmon.
  6. Add the sliced red bell pepper and snap peas around the salmon. Cover the skillet and simmer for about 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
  7. Remove from heat and sprinkle with fresh cilantro before serving.
  8. Serve the creamy coconut curry salmon over cooked rice or quinoa.

  • For a spicier kick, add 1-2 teaspoons of red pepper flakes or a diced jalapeño to the skillet.
