A delicious and creamy coconut curry salmon dish infused with Caribbean flavors, perfect for a delightful meal.
Ingredients
- 2 tablespoons coconut oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1/2 teaspoon turmeric
- 1 can (14 ounces) coconut milk
- 1 tablespoon lime juice
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 salmon fillets (about 6 ounces each)
- 1 red bell pepper, sliced
- 1 cup snap peas
- 1/4 cup fresh cilantro, chopped
- Cooked rice or quinoa, for serving
Instructions
- In a large skillet, heat the coconut oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
- Add the curry powder, ground cumin, and turmeric to the skillet, stirring well to combine. Cook for another minute.
- Pour in the coconut milk, lime juice, soy sauce, brown sugar, salt, and black pepper. Stir until the mixture is smooth and well combined.
- Gently place the salmon fillets into the skillet, skin-side down. Spoon some of the sauce over the top of the salmon.
- Add the sliced red bell pepper and snap peas around the salmon. Cover the skillet and simmer for about 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Remove from heat and sprinkle with fresh cilantro before serving.
- Serve the creamy coconut curry salmon over cooked rice or quinoa.
Notes
- For a spicier kick, add 1-2 teaspoons of red pepper flakes or a diced jalapeño to the skillet.
- Substitute the salmon with shrimp or chicken for a different protein option. Adjust cooking times accordingly.
